PRODUCTION AREA: Tenute Coste in the municipality of Lacco Ameno, in the north-west of the island of Ischia
VARIETY OF GRAPES: 50% Biancolella 50% Fiano
VINIFICATION: Harvested at the right degree of ripeness, the grapes are de-stemmed, crushed and softly pressed. The free run must thus obtained, clear and intact, is statically decanted at a temperature of about 8-10 degrees. After decanting, the must is subjected to slow fermentation in steel tanks in a strictly controlled oxytemperature (12 ° C) for about 15 days. The aging continues in steel with frequent battonage at a scalar frequency, in order to obtain a complex, structured and delicately scented wine. We will wait until February for bottling.
COLOR: Bright straw yellow, with elegant greenish reflections.
