Designation of origin

PRODUCTION AREA: Tenuta Baiola, Vigna Cimento Rosso, Tenuta Piromallo and Tenuta Citara in the municipality of Forio, western part of the island of Ischia
VARIETY OF GRAPES: 100% Biancolella
VINIFICATION: Biancolella is one of the great local white Ischian vines and certainly the most significant of our territory and our history. Harvested at the right degree of ripeness, the grapes are de-stemmed, pressed and softly pressed. The free run must thus obtained, limpid and intact, is statically decanted at a temperature of about 8-10 degrees. After decanting the must is subjected to slow fermentation in stainless steel tanks at a strictly controlled temperature (12 ° C) for about 15 days.
The aging continues in steel where there is also a long series of battonage at gradual frequency, in order to obtain a complex, structured and delicately scented wine. We will wait until February for bottling.
