Grapes: Biancolella 50% and Forastera 50%
Vineyard: Biancolella and Forastera, the two great native Ischitan vines, coming from the localities of Chiena and Pennanova in the municipality of Forio, east side of the island of Ischia, on an altitude of 250 meters above sea level. The Guyot-trained vines are 20 years old on average, with a density of 4,500-5,000 vines / hectare. The grapes are rigorously harvested by hand at the end of September, in a perfect state of ripeness vinification. The grapes are de-stemmed and subjected to soft pressing. The refinement on the noble lees continues in steel, with a long series of "batonnage" at gradual frequency, in order to obtain a complex and delicately scented wine. Bottling is expected at the end of February, followed by 30 days of bottle aging. The smell is harmonious, fruity, with the typical notes of Mediterranean citrus and pear. Velvety, fresh, dry and well structured when tasted. Served at 8-10 ° C, it goes well with light appetizers, shellfish, raw seafood, first courses based on fish or seafood. We recommend it in combination with Spaghetti with clams.
